Cascara is a tea made from the skins of milled coffee fruit. It is sweet and plummy and gives off a scent of hibiscus or raisin. Coffee is a fruit, and the skins or husks are often discarded except in places like Yemen, Somalia, or Bolivia. When you steep it in hot water, you’ll see the husks balloon into little broken fruit shapes. You can chew on these as well to get a sense of what the coffee fruit is like. This delicious Costa Rican variety is wonderful as a hot tea/coffee or as an iced beverage.
